Nutrición comunitaria y alimentación escolar en España: el ejemplo de las cantinas escolares de la Asociación de Caridad Escolar de Madrid (1901-1927)

Abstract

El trabajo analiza, desde la perspectiva higiénico-sanitaria, la iniciativa filantrópica de creación de cantinas escolares que puso en marcha la Asociación de Caridad Escolar en Madrid durante las primeras décadas del siglo XX. En primer lugar, con el objeto de explicar el contexto en el que surgió aquella iniciativa, además de destacar su inserción en el movimiento regeneracionista y de creciente interés por la infancia y la higiene escolar que vivía la sociedad española del momento, se exponen las deficiencias sanitarias y alimentarias que mostraba el proletariado madrileño y la población infantil. En segundo lugar, a partir de las memorias de la Asociación relacionadas con las cantinas, se aborda su funcionamiento y los contenidos y características de los menús que se ofrecieron, así como su evolución. Los resultados obtenidos permiten valorar la importancia que tuvieron este tipo de actividades en el desarrollo de la nutrición comunitaria en la España contemporánea y en qué medida contribuyeron a consolidar un interés colectivo por los problemas de la alimentación y la necesidad de abordarlos tanto desde el ámbito sanitario como educativo y comunitario.

The study analyses, from a health and hygiene perspective, the philanthropic initiative of the Madrid School Charity Association that led to the creation of school canteens in the first decades of the twentieth century. First, the context of the initiative is explained by highlighting the Association's activity within the Regenerationist movement and the growing interest in childhood and school health in early twentieth century Spanish society. Health and dietary deficiencies among the Madrid proletariat and the infant population are also explored. Secondly, the Association's reports on the canteens are used to examine how they were run and the contents and characteristics of the menus offered and their development. The results enable us to assess the importance of this type of activity in the development of community nutrition in contemporary Spain, the contribution of such initiatives to a collective interest in dietary problems and the need to address them within the health, education and community contexts.
